Specialty Single Origin Bars
We are introducing new flavors and regions.
These new bars average 2.5 oz
They are a bigger rectangular bar and will be for the more adventurous taste buds with different inclusions.
We are in the process of simplifying our smaller hexagon bars. Soon they will just be pure chocolate (no inclusions, just all the different farms & regions we work with & different percentages of sweetener added).
New Specialty Bars
80% Dark Balsamic Tanzania with Tart Cherries *Vegan
These cacao beans come from the Kokoa Kamili Fermentery in Mbingu Village, Morogoro Region, Tanzania
Historically, farmers in the Kilombero Valley received some of the lowest prices for cocoa in the country. In Kokoa Kamili’s first year alone Kilombero farmers received the highest prices in Tanzania for their cocoa.
Kokoa Kamili is situated in the Udzungwa Mountains National Park. It is one of three remaining sites that support Savannah Elephants in a mountainous environment. Current estimates say that 2,000 elephants reside in and around the Udzungwa area.
Ingredients:
Cacao Beans, Coconut Sugar, Cacao Butter, Freeze Dried Balsamic Vinegar, Cherries
70% Dark Chilies & Cinnamon Chiapas, MX *Vegan
These cacao beans come from the farms of the Reyen co-op in Chiapas Mexico
Cacao was domesticated in Mexico over 4000 years ago. During this rich history, ancient civilizations such as the Mokayas, Olmecs, Mayas or Aztecs put this crop at the center of their cultures and coined the first words that derived into what we now call “cacao” and “chocolate”.
Chiapas is what is called a “trinitario acriollado” (a mixture of criollo and trinitario)
Ingredients:
Cacao Beans, Coconut Sugar, Cacao Butter, Jalapeno, Chipotle, Ancho, Cinnamon
62% Dark Lavender Madagascar *Vegan
These cacao beans come from the Bejofo Estate, in Madagascar.
The Bejofo Estate is an organic cacao orchard that makes up one part of the 2000-hectare Akesson Estate in northwest Madagascar’s Sambirano valley.
Most of the trees are concentrated in the Sambirano Valley in the northwest, where soil and climate are ideal for growing high quality cacao.
Ingredients:
Cacao Beans, Coconut Sugar, Cacao Butter, Lavender Oil
70% Dark Orange Ecuadorian Chocolate with Banana Chips. *Vegan
These cacao beans come form the Esmeralda Ecuador Region.
This bar was a request from a local Ecuadorian coffee shop (Galapagos Coffee). They wanted to have orange because that is native to both lands and the banana is Ecuadors #1 export.
Ingredients:
Cacao Beans, Cane Sugar, Cacao Butter, Orange Oil, Banana Chips
Gianduiotti - Smooth Mexican Hazelnut Chocolate *Vegan
These cacao beans are from Chiapas Mexico.
They have a super creamy texture because we toss roasted hazelnuts in the stone grinder with the cacao and coconut sugar.
This bar was made with the inspiration of Pierre Paul Caffarel and Michele Prochet, the first to completely grind hazelnuts into a butter and incorporate it with cacao. The idea of cacao & hazelnuts being stone ground together is said to have arisen during Napoleon’s reign, when importing cocoa from South America became difficult. This flavor combination has become very popular, even today with products like Farro Roche and Nutella.
Ingredients:
Cacao Beans, Roasted Hazelnuts, Coconut Sugar, Cacao Butter
Locally made in AZ / Organic / Vegan / Gluten-Free / Ethically Sourced / Minimally Processed / Small Batch / Single Origin / Farmer-Direct
